Pork Al Pastor

PORK AL PASTOR WITH FAJITA VEGETABLES, PICO DE GALLO, AND CILANTRO LIME RICE


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 950/ Protein 34g

DIFFICULTY LEVEL: Medium 

INGREDIENTS: Lime, Pineapple, Tomatoes, Onion, Cilantro, Long Green Pepper, 3/4 Cup of Jasmin Rice, 1 Cup Monterey Jack Cheese, Ground Pork, 1 TBSP Fajita Spice Blend, 1 TSP Chili Powder, 2 TBSP Sour Cream, 1 TBSP Hot Sauce


Step 1: Start Prep

Wash and dry produce

Zest and Quarter lime

Dice pineapple

Step 2: Cook Rice

In a small pot, combine 2 TBSP of butter, 1.25 cups of water, and 1/4 TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW, AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

Step 3: Finish Prep and Make Pico

While rice cooks, dice tomatoe

Halve, peel, and thinly slice onions, mince a few slices until you have 2 TBSP

Roughly chop cilantro

Halve, core, and thinly slice green pepper into strips

In a small bowl, combine tomatoes, minced onion, half the cilantro, squeezed lime juice, and 1/4 TSP of salt and pepper

Step 4: Cook Pineapple and Vegetables

Heat a large pan over medium heat

Add pineapple. Cook for 5 minutes. Transfer to plate

Heat a drizzle of oil pan used for pineapple over medium heat. Add sliced onion, and green pepper. Cook for 9 minutes

Add half of Fajita spice blend, and 1 TBSP of water. Cook for 2 minutes. Season with 1/4 TSP of salt and pepper

Transfer to plate with pineapple

Step 5: Cook Pork and Make Crema

Heat a drizzle of oil in same pot over medium heat. Once pan is hot, add pork. Cook for 6 minutes

Add chili powder, Fajita Spice Blend, and 1/4 TSP of salt and pepper. Cook for 3 minutes. Remove from heat and stir in big squeeze of lime juice

For Crema:

Combine sour cream and hot sauce. Add 1 TBSP at a time until mixture reaches drizzling consistency. Season with 1/4 TSP of salt and pepper.

Step 6: Finish and Serve

Fluff rice with a fork, stir in lime zest, and remaining cilantro

Divide rice between shallow bowls, top with pork, pineapple and vegetables, and Pico de Gallo

Sprinkle with Monterey jack cheese

Drizzle with spicy crema

Serve with remaining lime wedge on the side
