Beef Enchiladas Verdes With Mexican Cheese, And Hot Sauce Crema


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Scallions, 2 TBSP Sour Cream, 1 TSP Hot Sauce, 1 TBSP Southwest Spice Blend, Long Green Pepper, Ground Beef, Green Salsa, Mexican Cheese, Flour Tortillas


Step 1: Prep

Heat broiler to high

Wash a drizzle dry produce

Halve, deseed, and dice green pepper

Thinly slice scallions

Step 2: Make Crema

In a small bowl, combine sour cream with hot sauce

Stir in water 1 TSP at a time until mixture reaches a drizzling consistency

Season with 1/4 TSP salt and pepper

Step 3: Cook Peppers

Heat a drizzle of oil in a large pan over medium heat

Add green pepper

Season with 1/4 TSP salt and pepper

Cook for 7 minutes

Step 4: Cook Filling

Add a drizzle of oil, ground beef, and scallions, and southwest spice blend to pan with green pepper. Season with 1/4 TSP of salt and pepper

Cook breaking up pieces until browned

Cook for 5 minutes

Stir in 1/4 of salsa verde, season with 1/4 TSP of salt and pepper

Turn off heat, transfer filling to a large bowl

Step 5: Assemble Enchiladas

Place a small amount of filling on one half of tortilla

Roll up tortilla, starting with filled side

Place seam sides down, in pan used for filling

Top with remaining salsa, and sprinkle with mexican cheese

Step 6: Finish and Serve

Broil Enchiladas for 4 minutes

Drizzle with crema and sprinkle with scallions

Serve hot and enjoy!
