Colombian Bistec A La Criolla With Jasmine Rice, Kidney Beans, And Cilantro

INGREDIENTS: Cilantro, 1 Can of Kidney Beans, 1/8 Cup Tomato Paste, 1 TSP Cumin, 1 TBSP Bouillion Paste, Ranch Steaks, Bell Pepper, 3/4 Cup of Jasmine Rice, Garlic Powder, Carrots, Onion, 2 TSP Dijon Mustard


Step 1: Start Rice

In a small pot, combine 2 TBSP of butter, rice, 1.25 cups of water, and 1/4 TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

Step 2: Prep

While rice cooks, wash and dry produce

Halve, peel, and thinly slice half the onion, dice remaining onion into pieces

Trim, peel, and dice carrots

Core, deseed, and dice bell pepper

Roughly chop cilantro

Step 3: Marinate Steak

Pat steak dry with paper towels, thinly slice against the grain

In a medium bowl, combine steak and sliced onion with mustard, half the cumin, half the garlic powder, a drizzle of oil, and 1/4 TSP of salt and pepper until evenly coated

Set aside to marinate until ready to use

Step 4: Start Beans

Heat a drizzle of oil in a medium pot over medium heat

Add diced onion, carrot, bell pepper, remaining cumin, and 1/4 TSP of salt and pepper

Cook for 4 minutes

Step 5: Finish Beans

Stir beans and liquid, bouillion paste, half the cilantro, half the tomato paste, remaining garlic powder, and 1/4 cup of water into pot with veggies

Bring to a boil, stirring constantly, then reduce heat to low

Cover and simmer undisturbed for 8 minutes

Season with 1/4 salt and pepper. Turn off heat, keep covered until ready to serve

Step 6: Cook Steak

Heat a drizzle of oil in a large pan over medium heat

Add steak and onion mixture, cook for 4 minutes

Reduce heat to low, stir in remaining tomato paste, and 1/4 cup of water

Simmer for 3 minutes

Season with 1/4 TSP salt and pepper

Step 7: Finish and Serve

Fluff Rice with a fork

Divide rice, beans and steak and onion between plates in separate sections

Garnish with remaining cilantro

Serve and Enjoy!
