Currywurst With Buttery Broccoli, Roasted Potato Wedges, and Garlic Mayo


PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Potatoes, Onion, 1/8 Cup Balsamic Vinegar, Broccoli, Bratwurst Sausage, 1/8 Cup Fig Jam, 1 TSP Smoked Paprika, 1 TBSP Worcestershire Sauce, 1 TBSP Curry Powder, 1/4 Cup Ketcup, 4 TBSP Mayo, 2 TSP Garlic Powder


Step 1: Prep and Mix Mayo

Adjust rack to top position, and preheat oven to 425

Wash and dry produce

Cut potatoes into wedges

Halve, peel, and finely dice half the onion

Cut broccoli into bite size pieces

In a small bowl, combine mayo, half the garlic powder, and 1 TBSP water

Set aside until ready to serve

Step 2: Roast Potatoes

Toss potatoes on one side of baking sheet with a large drizzle of oil, and 1/4 TSP of salt and pepper

Roast on top rack for 10 minutes

Meanwhile, in a second bowl, whisk together ketchup, worestercheir sauce, jam, half the vinegar, 1/4 cup water, 1 tsp sugar, and 1/4 TSP salt and pepper

Set aside

Step 3: Add Bratwurst

Once potatoes have roasted for 10 minutes, remove sheet from oven

Carefully add Bratwurst to opposite side of sheet

Return to top rack, and roast for 15 minutes

Step 4: Make Sauce

Meanwhile, heat a drizzle of oil in a small pot over medium heat

Add diced onion, season with 1/4 TSP of salt and pepper

Cook for 4 minutes

Reduce heat to low, add curry powder, paprika, and remaining garlic powder

Cook for 2 minutes

Add ketchup mixture, stirring to combine.

Cook for 6 minutes

Step 5: Cook Broccoli

While sauce cooks, place broccoli in a large microwave safe bowl

Microwave for 2 minutes

Carefully uncover and turn off heat, toss with 1 TBSP butter, and 1/4 TSP of salt and pepper

Step 6: Finish and Serve

Transfer Bratwurst to a cutting board, and slice

Add sliced Bratwurst to pot with curry sauce and stir to combine

Divide potato wedges, broccoli, and currywurst bewteen plates

Spoon curry sauce from pot over Bratwurst

Serve with garlic mayo on the side for dipping potatoes

Serve hot and enjoy!
