Honey Butter BBQ Pork Chops With Mashed Purple Sweet Potato And Lemon Green Beans


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Green Beans, Lemon, 2 TBSP Sour Cream, 2 TSP Honey, 1 TSP Chili Flakes, 1 TBSP BBQ Seasoning, Purple Sweet Potatoes, Pork Chops


Step 1: Prep

Wash and dry produce

Bring a large pot of salted water to a boil

Peel and dice purple sweet potatoes

Zest and Quarter Lemon

Trim Green Beans

Step 2: Mash Sweet Potatoes

Once water has boiled, place potatoes in pot

Cook for 20 minutes

Drain and return to pot

Add sour cream, and 2 TBSP of butter

Mash until smooth

Season with 1/4 TSP of salt and pepper

Keep covered off heat until ready to serve

Step 3: Make Honey Butter

While sweet potatoes cook, place 2 TBSP butter in a small microwave safe bowl, microwave for 15 seconds

Stir in honey and 1/4 TSP of salt and pepper

Step 4: Cook Pork

Pat pork dry with paper towels

Season with 1/4 TSP of salt and pepper

Rub all over with BBQ Seasoning

Heat a drizzle of oil in a large pan over medium heat, add pork

Cook for 6 minutes per side

Step 5: Cook Green Beans

While pork cooks, pierce green beans bag with a fork

Place bag on plate

Microwave for 2 minutes or until tender

Carefullly transfer green beans to a medium bowl, and toss with lemon zest, and 1/2 TBSP of butter, a squeeze of lemon juice, and 1/4 TSP of salt and pepper

Step 6: Finish and Serve

Divide mashed purple potatoes and green beans between plates

Top potatoes with pork

Dollop pork with honey butter, and sprinkle with chilli flakes

Serve with remaining lemon wedge on the side

Serve hot and enjoy!
