Italian Beef Fusilli
Italian Beef Fusilli With Roasted Zucchini, And Fresh Parmesan

DIFFICULTY LEVEL: MediumINGREDIENTS: Zucchini, Onion, Fusilli Pasta, 1/8 Cup Parmasean Cheese, 2 TBSP Cream Cheese, Ground Beef, 1 TBSP Italian Seasoning, 1 TBSP Garlic Powder, 3 TBSP Sour Cream
Step 1: Prep
Bring a large pot of water to a boil
Wash and dry produce
Preheat oven to 450 degrees
Trim and half zucchini, slice into half moons
Finely dice onion
Step 2: Cook Vegetables
Line a sheet pan
Place zucchini, and drizzle with oil
Season with ¼ TSP of salt, pepper, all purpose seasoning, italian seasoning, garlic powder, and paprika
Bake for 15 minutes
While zucchini cooks, heat a large pan on medium heat with a drizzle of oil
Add onions, and season with ¼ TSP of salt, pepper, and italian seasoning
Cook for 4 minutes
Step 3: Cook Pasta
While vegetables cook, cook pasta
Once water has boiled, cook Fusilli for 3 minutes
Reserve ¾ cup of water, and drain remainder
Toss with a drizzle of of oil, and set aside
Step 4: Make Sauce
While pasta cooks, heat a drizzle of oil in a pan used for onions on medium heat
Add beef, garlic powder, italian seasoning, and ¼ TSP of salt and pepper
Cook breaking into small pieces
Cook for 6 minutes
Reduce to low, stir in cream cheese, ½ cup reserved pasta cooking water, and 1 TBSP butter
Cook stirring occasionally until cream cheese and butter are melted and combined for 2 minutes
Step 5: Finish Pasta
Add vegetables and Fusilli with sauce, stir to combine
Season with ¼ TSP of salt and pepper
Turn off heat, stir in sour cream, and half the parmesean
If needed, add splashes of pasta water if necessary
Step 6: Finish and Serve
Divide pasta between bowls
Top with remaining parmesean
