Cuban Spiced Pork With Pineapple Citrus Glazed Onion Sauce, And Cilantro Lime Rice


PREP TIME: 10 Minutes/ COOK TIME: 25 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 900/ Protein 48g

DIFFICULTY LEVEL: Medium

INGREDIENTS: Pork Filets, Yellow Onion, ¾ Cup of Jasmine Rice, Lime, Orange, Pineapple, 1 TBSP Cuban Spice Blend


Step 1: Cook Rice

To a small pot on medium heat, melt 2 TBSP of butter

Combine rice, 1.25 cups of water, Cilantro, juice from half a lime, and ¼ TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Keep covered and off heat until ready to serve

Step 2: Prep

Wash and dry produce

Peel and mince garlic

Zest and quarter lime

Zest and juice orange

Roughly chop cilantro

Dice pineapple into small chunks

Peel and slice onion

Rinse pork, and pat dry with paper towels

Step 3: Cook Pork

To a medium pan on medium heat, drizzle oil

Season both sides of pork with ¼ TSP of salt, pepper, and ¼ TSP of Cuban Spice Blend

Place into hot pan with oil

Cook for 5 minutes

Flip

Cook for 5 minutes more

Rest on wooden cutting board before slicing for atleast 3 minutes

Tent with foil to keep warm

Step 4: Cook Onions

To same pan used for pork, on medium heat combine 2 TBSP of butter, onions, orange zest and juice, remainder of Cuban spice blend, and ¼ TSP of salt and pepper

Cook Onions, and reduce juice for 5 minutes

Turn heat to medium high if liquid is not becoming thick

Step 5: : Finish and Serve

Divide rice between shallow bowl

Top with onions

Slice pork, and place on top

Ganish with any remaining cilantro

Serve with lime wedge

Serve Hot and Enjoy!
