Cheesy Tex Mex Ramen Skillet With Tomato, Green Pepper, And Toasted Panko Topping

DIFFICULTY LEVEL: Easy

INGREDIENTS: Lime, 1 Cup Cheddar Cheese, 2 TSP Hot Sauce, ½ Cup Panko Bread Crumbs, Ramen Noodles, ½ Cup Cream Sauce, Scallions, 1 TBSP Southwest Spice Blend, 2 TBSP Cream Cheese, Pablano Pepper, Tomato, 1/8 Cup Tomato Paste


Step 1: Prep

Bringa large pot of water to a boil

Wash and dry produce

Core, deseed, and dice green pepper

Thinly slice scallions, separating whites from greens

Dice tomatoes

Quarter Lime

Step 2: Toast Panko

Melt 1 TBSP in a large pan over medium heat

Add panko and cook for 3 minutes

Turn off heat

Transfer to a small bowl

Season with ¼ TSP salt and pepper

Wipe out pan

Step 3: Make Sauce

Heat a drizzle of oil in same pan used for panko over medium heat

Add green pepper, scallion whites

Season with southwest spice , and ¼ TSP of salt and pepper

Cook for 3 minutes

Add tomato paste and cook for 30 seconds

Stir in cream sauce base, cream cheese, and ¾ cup of water

Bring to a simmer

Cook for 2 minutes

Whisk in cheddar, and cook for 2 minutes

Step 4: Finish and Serve

Once water is boiling, add noodles

Cook for 2 minutes

Drain and rinse with cold water

Remove cheese sauce from heat, stir in tomato and drained noodles

Taste and season with ¼ TSP of salt and pepper

Top cheesy tex mex ramen skillet with toasted panko, scallion greens, a squeeze of lime juice, and hot sauce

Serve family style with remaining lime wedge on the side

Serve hot and enjoy
