Creamy Cilantro Steak Bowls

CREAMY CILANTRO STEAK BOWLS WITH GARLIC LIME RICE AND CHARRED GREEN PEPPER


PREP TIME: 15 Minutes/ COOK TIME: 30 Minutes

DIFFICULTY LEVEL: MEDIUM
INGREDIENTS: Garlic,  Cilantro, Onion, Lime, Jalapeño, 2 TBSP Sour Cream, 1 TSP Cumin, Long Green Pepper, Ranch Steaks, and 1/2 Cup of Jasmine Rice

Step 1: Prep

Wash and dry produce.

Peel and mince garlic, mince cilantro, thinly slice onion, mince 2 TBSP of onion, zest and quarter lime, slice jalapeño, and thinly slice green pepper.

Step 2: Cook Rice

Heat 2 TBSP of butter in a small pot over medium heat.

Add rice, 1 cup of water, and 1/4 TSP of salt. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes.

Keep covered off heat until ready to serve.

Step 3: Make Sauce

In a small bowl combine sour cream, cilantro, minced onion, 1 TBSP of oil, minced garlic, juice for two lime wedges minced jalapeño, 1/4 TSP of cumin, salt and pepper.

Stir in water 1 TSP at a time until drizzling consistency.

Step 4: Cook Steak

Pat steak dry with paper towels. Season all over with 1/4 cumin, salt, and pepper.

Heat a large drizzle of olive oil in a large pan over medium heat. Add steaks, cook to desired doneness. 3-6 minutes per side.

Rest steaks for minimum 5 minutes before slicing.

Step 5: Cook Veggies

Heat a drizzle of oil on medium heat. Add green pepper sliced onion, and 1/4 TSP of salt and pepper. Cook for 6-8 minutes.

Step 6: Finish and Serve

Fluff rice with a fork, stir in lime zest, and 1/4 TSP of salt and pepper.

Thinly slice steak against the grain.

Divide rice between plates, top with veggies, and steak. Drizzle with sauce. Serve with lime wedge.

Serve hot and enjoy.
