Bratwurst With Carmelized Onion And Apple, Creamy Mashed Potatoes, And Apple Cranberry Salad


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: 3 TBSP Sour Cream, Potatoes, Granny Smith Apple, 1 TBSP Chicken Bouillon Paste, Bratwurst Sausage, Lemon, Mixed Greens, 1/4 Cup Dried Cranberries, Onion, Chives, 2 TBSP Mayo, 4 TSP Dijon Mustard


Step 1: Prep

Wash and dry produce

Peel and dice potatoes

Halve, peel, and thinly slice onion

Halve, core, and thinly slice one apple

Thinly slice chives

Quarter lemon

Step 2: Cook Potatoes

Place potatoes in medium pot with enough salted water to cover by two inches

Bring to a boil

Cook for 20 minutes

Reserve 1/2 cup of potato cooking liquid, then drain remainder

Return potatoes to pot, and mash with sour cream and 2 TBSP of butter until smooth and creamy, adding splashes of potato liquid as needed

Season with 1/4 TSP of salt and pepper

Cover and set aside until ready to serve

Step 3: Start Bratwurst

While potatoes cook, heat a drizzle of oil a large pot over medium heat

Add Bratwurst, and cook for 4 minutes

Turn off heat, transfer to a plate

Step 4: Finish Bratwurst

Melt 1 TBSP of butter in a pot used for Bratwurst over medium heat

Add onion and sliced apple

Cook for 4 minutes

Season with 1/4 TSP of salt and pepper

Add bouillion paste, half the mustard, and 1/4 cup of water

Return Bratwurst back to pan, and cook for 10 minutes

Transfer Bratwurst to cutting board

Season mixture with 1/4 TSP of salt and pepper if desired

Step 5: Make Salad

Meanwhile, halve, core, and dice remaining apple

In a large bowl, combine mayo, half the chives, remaining mustard, juice from half of lemon, 1/4 TSP of salt and pepper

Add mixes greens, diced apple, and cranberries

Toss to combine

Step 6: Finish and Serve

Slice Bratwurst into 1/2 pieces

Divide Bratwurst, mashed potatoes, and salad between plates

Top Bratwurst and potatoes with Carmelized onion and apple

Spoon any remaining sauce from pan on top

Garnish with remaining chives and serve with any remaining lemon wedge

Serve hot and enjoy!
