Mojo Pork Patties

Citrus Mojo Pork Patties and Black Beans With Pickled Red Onion, And Cilantro Lime Rice


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 1190/ Protein 41g

DIFFICULTY LEVEL: Medium

INGREDIENTS: Red Onion, 1.25 Cup Jasmine Rice, 1 TSP Cumin, Garlic Cloves, 1 TBSP Fajita Spice Blend, Black Beans, Ground Pork, Lime. 1/4 Cup Panko Bread Crumbs, Orange, 1 TSP Garlic Powder, Cilantro


Step 1: Cook Rice

In a small pot combine 2 TBSP butter, Rice, 1.25 cups of water, and 1/4 TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Cook rice for 15 minutes

Keep off heat until ready to serve

Step 2: Prep

While rice cooks, wash and dry produce

Halve, peel, and thinly slice half the onion, finely dice remaining onion

Zest and halve limes

Peel and mince garlic

Mince cilantro

Halve oranges

Step 3: Pickle Onion

In a medium safe bowl, combine sliced onion, 1/2 TSP sugar, juice from half the lime, and 1/4 TSP of salt and pepper

Cover bowl tightly with plastic wrap, microwave for 60 seconds

Refrigerate, stirring occasionally until ready to serve

Step 4: Cook Beans

Heat a drizzle of oil in a second pot over medium heat. Add diced onion, garlic powder, cumin, half the fajita spice, and 1/4 TSP of salt and pepper

Cook for 4 minutes

Add beans and their liquid and 1/4 Cup of water

Using the back of a wooden spoon, roughly mash half the beans

Simmer for 10 minutes

Step 5: Make Mojo Sauce

Meanwhile in a small bowl, combine minced garlic, half the lemon zest. Half the cilantro, 1 TBSP Olive oil, juice from half the orange, juice from remaining lime, and 1/4 TSP salt and pepper

Step 6: Cook Patties

In a second bowl combine pork, panko, remaining Fajita Spice Blend, and 1/4 TSP of salt and pepper

Form into equal parties, and cook for 4 minutes per side

Transfer to plate

Step 7: Finish and Serve

Fluff rice with fork, stir in remaining lime zest, remaining cilantro and 1 TBSP of butter

Divide Rice and beans between shallow bowls

Top with patties and pickled onion

Drizzle with mojo sauce

Serve with remaining mojo sauce on the side

Serve hot and enjoy!
