Roasted Pork Filets With Lemon Baby Broccoli, Mashed Potatoes, and Shallot Gravy


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Baby Broccoli, 1 TBSP Chicken Bouillon Paste. Lemon, Shallot, 1 TBSP Fry Seasoning, Potatoes, 1 TBSP Flour, 3 TBSP Sour Cream, Pork Filets


Step 1: Prep

Wash and dry produce

Adjust rack to top position, and preheat oven to 425

Peel and dice potatoes

Trim thick ends from baby broccoli

Zest and quarter lemon

Halve, peel, and mince shallot

Step 2: Cook Potatoes

Place potatoes in a large pot with enough water to cover 2 inches

Bring to a boil, and cook for 20 minutes

Reserve 1/2 Cup potato cooking liquid, then drain

Return potatoes to pot, and keep covered off heat until ready to mash

Step 3: Roast Baby Broccoli

While potatoes cook, toss baby broccoli on one side of baking sheet with a drizzle of oil, lemon zest, half of the fry seasoning, and 1/4 TSP of salt and pepper

Roast on top rack for 8 minutes

Step 4: Sear Pork

While broccoli roast, pat pork dry with paper towels, season with fry seasoning, and 1/4 TSP of salt and pepper

Heat a large drizzle of oil in a large pan over medium heat

Add pork, and cook for 4 minutes per side

Step 5: Roast Pork

Once broccoli has roasted 8 minutes, remove from oven. Carefully transfer pork to empty side

Return to oven and roast for 12 minutes

Step 6: Make Shallot Gravy

Heat a drizzle of oil in pan used for pork over medium-low heat

Add shallot, cook for 2 minutes

Stir in flour, bouillion paste, 1/3 cup water, and a squeeze of lemon juice

Bring to a simmer, and cook for 3 minutes

Turn off heat, and stir in 1 TBSP butter

Season with 1/4 TSP of salt and pepper

Step 7: Finish and Serve

Return pot with potatoes to low heat

Add sour cream, and 1 TBSP butter

Mash until smooth, adding splashes of reserved potato cooking liquid as needed

Season with 1/4 TSP salt and pepper

Thinly slice pork

Divide pork, mashed potatoes, and baby broccoli between plates

Top pork and potatoes with shallot gravy

Serve with remaining lemon wedge on the side

Serve hot and enjoy!
