Pistachio Crusted Lamb Chops And Creamy Polenta With Shallot Grape Pan Sauce and Roasted Green Beans


PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Green Beans, 1/8 Cup Pistachios, Shallots, Parsley, 1 TSP Garlic Powder, 1/2 Cup Cream Sauce Base, Lamb Chops, 2 TBSP Sour Cream, Red Grapes, 1 TSP Dried Rosemary, Pre Cook Polenta, 2 TSP Dijon Mustard, 1 TBSP Chicken Bouillon Paste, 1/2 Cup Panko Bread Crumbs


Step 1: Prep

Wash and dry produce

Adjust rack to top position, and preheat oven to 425

Trim green beans

Finely chop pistachios

Halve, peel, and finely dice shallot

Halve grapes

Finely chop parsley

Step 2: Make Polenta

In a small pot, combine Polenta and 1/2 cup of water over medium heat. Mash with a potato masher until mostly smooth for one minute

Stir in garlic powder, half the cream sauce base, and 1 TBSP butter

Cook for 2 minutes

Season with salt and pepper to taste

Keep covered off heat until ready to serve

Step 3: Roast Green Beans

Toss green beans on a baking sheet with a drizzle of oil, and 1/4 TSP of salt and pepper

Roast on top rack for 15 minutes

Step 4: Prep Lamb

In a small bowl, combine panko, pistachios, half the rosemary, and 1/4 TSP of salt and pepper

Pat lamb chops dry with paper towels. Season all over with 1/4 TSP of salt and pepper, evenly brush lamb all over with sour cream, then mound all over with panko mixture. Pressing firmly to adhere

Step 5: Cook Lamb

Heat 1/3 layer of oil in a large pan over medium heat

Add coated lamb, and cook until golden 2-4 minutes per side

Cook in batches if necessary. Don't over crowd pan

Transfer to a paper towel lined plate

Step 6: Make Sauce

Heat a drizzle of oil in a medium pan over medium-high heat

Add shallot and grapes

Cook for 3 minutes

Add bouillion paste, and 1/4 cup of water

Cook for 2 minutes

Remove from heat stir in mustard, parsley, and 1 TBSP butter

Season with 1/4 TSP of salt and pepper

Step 7: Finish and Serve

Divide polenta between plates

Top with green beans, and lamb chops

Spoon pan sauce over lamb

Serve hot and enjoy!
