Pork Sausage Cavatappi Bolognese With Roasted Zucchini, Grape Tomatoes And Parmesan

DIFFICULTY LEVEL: Easy

INGREDIENTS: Italian Sausage, 1 TBSP Chicken Bouillon Paste, 1 TBSP Italian Seasoning, Grape Tomatoes, 2 TBSP Sour Cream, 1/8 cup Tomatoe Paste, Onion, Zucchini, Cavatappi Pasta, ½ Cup Parmasean Cheese


Step 1: Prep

Wash and Dry Produce

Adjust rack to top position and preheat oven to 450 degrees

Bring a large pot of salted water to a boil

Trim and halve zucchini and slice into half moons

Halve and thinly slice onions

Step 2: Roast Vegetables

Toss zucchini and tomatoes on a baking sheet with a drizzle of oil, half the italian seasoning, and ¼ TSP of salt and pepper

Roast on top rack, roast for 16 minutes

Tent foil to keep warm

Step 3: Cook Pasta

Once water is boiling, add cavatappi to pot

Cook for 11 minutes

Reserve 1.50 cups of pasta cooking water, then drain

Step 4: Cook Onion and Sausage

While pasta cooks, remove sausage from casing, discard casing

Heat a drizzle of oil in a large pan over medium heat

Add onion and ¼ TSP of salt and pepper

Cook for 6 minutes

Add sausage and cook for 4 minutes

Step 5: Make Sauce

Add tomato paste and remaining italian seasoning to pan. Cook for 1 minute

Stir in bouillion paste, 1 Cup reserved pasta water, and ¼ TSP of salt and pepper

Bring to a simmer, cook for 3 minutes

Reduce heat to low

Step 6: Finish and Serve

Stir drained pasta, roasted zucchini, tomatoes, sour cream, and 1 TBSP butter into pan until throughly combined

Divide pasta between bowls

Sprinkle parmesean and serve

Serve hot and Enjoy!
