Chicken Bahn Mi With Pickled Vegetables, Ginger Jasmine Rice, And Chili Mayo

DIFFICULTY LEVEL: MediumINGREDIENTS: 2 TBSP Ponzu Sauce, Shredded Carrots, Cucumber, ¼ Cup Sweet Soy Glaze, 1/8 Cup Thai Chili Sauce, 2 TBSP White Wine Vinegar, Garlic, 2 TBSP Mayo, Chicken Breast, ¾ Cup Jasmine Rice, Cilantro, Ginger
Step 1: Prep
Wash and Dry Produce
Thinly slice cucumber
Peel and Mince Garlic
Remove skin from ginger, and finely mince
Roughly chop Cilantro
Step 2: Cook Rice
In a small pot on medium heat, melt 2 TBSP of butter
Combine rice, ginger, garlic, 1.25 cup of water, and ¼ TSP of salt and pepper
Bring to a boil
REDUCE HEAT TO LOW AND COVER
Simmer for 15 minutes
Keep covered off heat until ready to serve
Before serving, fluff rice with a fork
Step 3: Prep and Cook Chicken
Pat chicken dry with a paper towel
Preheat large pan over medium heat with a drizzle of oil
Season chicken with ¼ TSP of salt, pepper, all purpose seasoning, paprika, garlic powder, salt and pepper
Place chicken in hot pan
With a pastry brush, brush tops of chicken with sweet soy galze
Cook for 7 minutes
Flip, and cook for another 7 minutes. Brush 2nd side of chicken with sweet soy glaze
Rest on wooden cutting board for 2 minutes before slicing
Step 4: Pickle Vegetables
In a latge bowl, combine carrots, cucumber, ponzu sauce, rice wine vinegar, and ¼ TSP of salt and pepper
Mix well, and set aside until ready to serve
Step 5: Make Sauce
While chicken cooks:
Combine Chili sauce with mayo, mix well
Step 6: Finish and Serve
Divide rice between bowls
Slice chicken, place on top of rice
Top with pickled vegetables
Drizzle with chili mayo
Serve hot and Enjoy!
