Chicken Sausage Cavatappi Bolognese With Roasted Zucchini And Parmesan


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Zucchini, Onion, 2 TBSP Italian Seasoning, 1/4 Cup Tomato Paste, 2 TBSP Sour Cream, Cavatappi Pasta, Italian Chicken Sausage, 3 TBSP Parmesean Cheese, 1 TBSP Chicken Bouillon Paste


Step 1: Prep

Adjust rack to top position and preheat oven to 450 degrees

Bring a large pot of salted water to a boil

Wash and dry produce

Trim, halve, and cut zucchini into quarter half moons

Halve peel and thinly slice onion

Step 2: Roast Zucchini

Toss zucchini into baking sheet with a drizzle of oil, half the italian seasoning, and 1/4 TSP of salt and pepper

Roast on top rack for 16 minutes

Tent with foil to keep warm

Step 3: Cook Pasta

Once water is boiling, add cavatappi to pot, cook for 11 minutes

Reserve 1.5 cups of pasta cooking water, drain remainder

Step 4: Cook Onion and Sausage

While pasta cooks, heat a drizzle of oil in a large pan over medium heat, add onion, and 1/4 TSP of salt and pepper

Cook for 5 minutes

Add sausage, breaking up meat into pieces, cook for 4 minutes

Step 5: Make Sauce

Add tomato paste, and remaing Italian seasoning to pan, cook for 1 minute

Stir in stock concentrate, 1 cup reserved cooking liquid, and 1/4 TSP of salt and pepper

Bring to a simmer, cook for 3 minutes

Reduce heat to medium low

Step 6: Finish and Serve

Stir in drained cavatappi, roasted zucchini, sour cream, 2 TBSP of butter into pan used til throughly combined

Divide pasta between bowls

Sprinkle with parmesean

Serve hot and Enjoy!
