Chimichurri Steak

Creamy Chimichurri Bavette Steak With Rice, and Roasted Garlic Green Beans


PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 600/ Protein 34g

DIFFICULTY LEVEL: Medium

INGREDIENTS: 3/4 Cup Jasmine Rice, 1 TSP Garlic Powder, 1/8 Cup Chimichurri, Bavette Steak, 2 TBSP Garlic Powder, Green Beans


Step 1: Start Prep and Cook Rice

Adjust rack to middle position, and preheat oven to 425 degrees

In a small pot combine 2 TBSP of butter, rice, 3/4 Cup of water, and a pinch of salt

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered off heat until ready to serve

Step 2: Finish Prep

While rice cooks, wash and dry produce

Trim green beans

Step 3: Roast Green Beans

Toss Green beans with a drizzle of oil, garlic powder, and 1/4 TSP of salt and pepper

Roast on top rack for 15 minutes

Step 4: Make Chimichurri

While green beans roast, in a small bowl combine Chimichurri sauce and sour cream

Mix well

Step 5: Cook Steak

Heat a drizzle of oil in a large pan over medium heat

Season steaks all over with 1/4 TSP of salt, pepper, garlic powder, all purpose seasoning, and paprika

Place in hot pan

Cook to desired doneness

For medium rare 4 minutes per side

Remove from heat, and rest for 5 minutes before slicing

Step 6: Finish and Serve

Thinly slice steak

Fluff rice with a fork

Divide rice and green beans between plates in separate sections

Top rice with steak

Spoon over creamy Chimichurri

Serve hot and enjoy!
