Ginger Pork Dumplings
Handmade Soy Ginger Pork Dumplings With Sesame Cucumber Salad, and an Umami Dipping Sauce

DIFFICULTY LEVEL: HardINGREDIENTS: Wonton Wrappers, Sesame Seeds, Ground Pork, 1/8 Cup Sesame Oil, Ginger, 1/4 Cup Rice Wine Vinegar, Scallions, Garlic, 1 TBSP Corn Starch, 1/8 Cup Soy Sauce, Cucumber
Step 1: Prep and Make Salad
Wash and dry produce
Trim and halve cucumber into half moons
Trim and thinly slice scallions
Peel and mince ginger
Peel and mince garlic
In a medium bowl, combine cucumber, scallions, vinegar, sesame seeds, 1/2 TSP sugar, and 1/4 TSP of salt and pepper
Set aside, stirring occasionally until ready to serve
Step 2: Make Filling
In a large bowl combine pork, ginger, garlic, scallions, corn starch, half the soy sauce, half the sesame oil, 2 TSP sugar, and 1/4 TSP of salt and pepper
Step 3: Assemble Dumplings
On a large clean work surface, working one at a time, add 1 TBSP filling to center of each Wonton wrappers. Leaving 1/4 inch boarder around the edges
Lightly brush edges with water using your fingers
Bring two opposite corners together, pinch to seal
Repeat with remaining corners to form dumpling
Step 4: Cook Dumplings
Heat a large pan with oil over medium heat
Add dumplings, sealed side up
Cook for 2 minutes
Carefully add 3/4 cups of water, then cover with a tight fitting lid
Steam for 7 minutes
Step 5: Mix Dipping Sauce
In a small bowl combine remaining sesame oil, and remaining soy sauce
Mix well
Step 6: Finish and Serve
Divide dumplings and cucumber salad between plates
Serve with dipping sauce on the side
Serve hot and enjoy!
