Sun Dried Tomato Stuffed Chicken

Creamy Sun Dried Stuffed Chicken, With Mashed Potatoes, And Roasted Green Beans

DIFFICULTY LEVEL: Medium

INGREDIENTS: 3 TBSP Sour Cream, Green Beans, Potatoes, 2 TBSP Cream Cheese, 1 TBSP Chicken Bouillon Paste, Lemon, 3 TBSP Parmesean Cheese, Sun Dried Tomatoes, Chicken Cutlets, 2 TBSP Dijon Mustard, 1 TSP Garlic Powder, 1/8 Cup Basil Paste


Step 1: Prep and Stuff Chicken

Preheat oven to 425 degrees

Trim green beans

Roughly chop sun dried tomatoes

Zest and quarter lemon

In a small bowl, mix together cream cheese, sundried tomato, basil paste, 1/2 of parmesean cheese, and 1/4 TSP of salt and pepper

Pat chicken dry with paper towels

Cut a slit in the center of chicken to create a pocket

Evenly stuff chicken pocket with cheese filling

Season both sides of chicken with 1/4 TSP of salt and pepper

Step 2: Cook Potatoes

Place potatoes in a medium pot with enough salted water to cover by 2 inches

Bring to a boil

Cook for 20 minutes

Reserve 1/2 cup potato liquid, then drain and return potatoes to pot

Cover to keep warm

When ready to mash, combine 2 TBSP of butter, sour cream, reserved potato water, and 1/4 TSP salt and pepper

Mash well

Step 3: Prep Green Beans

Toss green beans with a drizzle of oil, 1/4 TSP of salt and pepper, half the parmesean cheese, and garlic powder

Place on half of a baking sheet

Step 4: Cook Chicken and Beans

Heat a large pan with a drizzle of oil on medium heat

Add chicken and cook for 3 minutes per side

Remove from heat, and place on second half of baking sheet with green beans

Roast in oven for 15 minutes

Step 5: Make Pan Sauce

Heat a small sauce pan on medium-low heat

Add lemon zest, bouillion paste, half the mustard, half the sour cream, 1/4 cup of water, 1 TBSP of butter, juice from half the lemon, 1/4 TSP of sugar, and 1/4 TSP of salt and pepper

Whisk consistently until combined

Cook for 3 minutes

Add splashes of water if too thick

Step 6: Finish and Serve

Divide mash potatoes, green beans, and stuffed chicken onto plates

Spoon pan sauce over chicken and potatoes

Serve with lemon wedge on the side

Serve hot and enjoy!
