Onion Crunch Salmon With Creamy Potatoes, and Roasted Green Beans


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Potatoes, Green Beans, 1 Cup Crisp Fried Onions, 2 TBSP Sour Cream, 1/8 Cup Honey Dijon Dressing, 1/4 Cup Monterey Jack Cheese, Salmon


Step 1: Prep and Make Crust

Adjust rack to middle position

Preheat oven to 425 degrees

Wash and dry produce

Dice potatoes

Trim green beans

Crush crispy fried onions

Transfer to a bowl

Stir in Monterey jack cheese

Reserve 1 TBSP dressing in a separate bowl

Step 2: Cook Potatoes

Place potatoes in a medium pot with enough salted water to cover by 2 inches

Bring to a boil

Cook for 20 minutes

Reserve 1/2 cup potato liquid, then drain and return potatoes to pot

Cover to keep warm

Step 3: Coat Salmon

Pat salmon dry with paper towels, and season all over with 1/4 TSP of salt and pepper

Place on one side of baking sheet

Evenly spread tops of salmon with a thin layer of reserved dressing

Mound coated sides with onion crust, pressing to adhere

Step 4: Roast Salmon and Beans

On opposite side of baking sheet from coated salmon, toss green beans with a drizzle of oil, and 1/4 TSP of salt and pepper

Roast on middle rack for 15 minutes

Step 5: Mash Potatoes

Meanwhile, mash potatoes with sour cream, 2 TBSP butter, and 1/4 TSP of salt and pepper, until smooth, adding splashes reserved potato cooking liquid as needed

Step 6: Finish and Serve

Divide mashed potatoes, green beans, and salmon between plates

Serve with remaining dressing on the side

Serve hot and enjoy!
