Cilantro Steak
Creamy Cilantro Steak Bowls With Garlic Lime Rice, And Charred Green Pepper
PREP TIME: 10 Minutes/ COOK TIME: 30 Minutes

DIFFICULTY LEVEL: MediumINGREDIENTS: 2 TBSP Sour Cream, Onion, 1 TSP Cumin, Ranch Steak, Long Green Pepper, Jalapeño, Lime, Cilantro, ¾ Cup Jasmine Rice, Garlic
Step 1: Prep
Wash and dry produce
Peel and mince garlic, set aside ¼ TSP for step 3
Mince cilantro
Halve, peel, and thinly slice onion
Mince a few slices until you have 1 TSP
Zest and quarter lime
Slice Jalapeño into thin rounds
Mince a few slices until you have ½ TSP
Core, deseed, and thinly slice green pepper
Step 2: Cook Rice
Heat a drizzle of oil in a pot over medium heat
Add remaining garlic, and cook until fragrant for 30 seconds
Stir in rice, 1.25 cups if rice, and ¼ TSP of salt and pepper
Bring to a boil
REDUCE HEAT TO LOW AND COVER
Simmer for 15 minutes
Keep covered off heat until ready to serve
Step 3: Make Sauce
Meanwhile in a small bowl, combine sour cream, cilantro, minced onion, 1 TBSP olive oil, reserved ¼ TSP garlic, juice from two lime wedges, a pinch of minced jalapeno, ¼ TSP of cumin, salt and pepper
Stir in 1 TSP of water at a time until mixture reaches a drizzling consistency
Step 4: Cook Steak
Pat steak dry with paper towels
Season all over with remaining cumin, salt and pepper
Heat a large drizzle of oil in a large pan over medium heat
Add steak and cook to desired doneness 3-6 minutes per side
Turn off heat, transfer steak to a cutting board to rest
Step 5: Cook Vegetables
Heat a drizzle of oil in same pan over medium heat
Add green pepper, sliced onion, and ¼ TSP of salt and pepper
Cook for 6 minutes
Step 6: Finish and Serve
Fluff rice with a fork
Stir in lime zest
Thinly slice steak against the grain
Divide rice between bowls
Top with veggies and steak
Drizzle steak with sauce
Top with as sliced jalapeno as you like
Serve with remaining lime wedge on the side
Serve hot and enjoy!
