Salsa Verde Enchiladas

One Pan Pork Enchiladas Verdes With Mexican Cheese, And Hot Sauce Crema


PREP TIME: 10 Minutes/ COOK TIME: 30 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 860/ Protein 37g

DIFFICULTY LEVEL: Easy

INGREDIENTS: 2 TBSP Sour Cream, Long Green Pepper, 1 Cup Salsa Verde, Ground Pork, Flour Tortillas, Scallions, 1 TBSP Taco Spice Seasoning, Mexican Cheese, 1 TBSP Hot Sauce


Step 1: Prep

Heat broiler to high

Deseed pepper, and dice

Step 2: Make Crema

In a small bowl, combine sour cream and hot sauce

Mix well

Set aside until ready to use

Step 3: Cook Pork

In a large oven safe pan, drizzle oil

Place pork in hot pan, mash finely with a meat masher breaking into smaller pieces

Season with taco seasoning, and ¼ TSP of salt and pepper

Cook for 6 minutes, stirring occasionally

Step 4: Cook Vegetables

Once meat has cooked, combine long pepper, and season with ¼ TSP of salt and pepper

Mix well

Cook for 5 additional minutes

Place meat mixture into a bowl, and wipe out pan

Step 5: Prepare Enchiladas

In same pan used for meat, spray with non stick spray

Fill tortillas with meat and pepper mixture, tightly rolling to make enchilada

Continue rolling tortillas, and line into oven safe pan

Top with salsa verde sauce, mexican cheese, and top with any additional meat mixture

Place into broiler oven

Broil for 4 minutes

Step 6: Finish and Serve

Remove broiler, and let rest for 4 minutes before plating

Top with hot sauce crema

Garnish with scallions

Serve hot and Enjoy!
