Ginger Ponzu Turkey Patties
GINGER PONZU TURKEY PATTIES WITH BROCCOLI CABBAGE SALAD AND SWEET CHILI MAYO

INGREDIENTS: Broccoli cut into florets, 1 thumb of minced ginger, sliced scallions, 2 TBSP of mayo, 1/4 cup of ginger dressing, 2 TBSP chicken bouillon paste, 1/4 cup of sweet chili sauce, 1/3 cup of ponzu sauce, 1/2 cup of panko bread crumbs, 1 cup of shredded cabbage, and ground turkey
Step 1: Prep
Preheat Oven to 450. Wash and dry produce.
Cut broccoli into florets, mince and grate ginger, and slice scallions.
Step 2: Roast Broccoli
Toss broccoli with a large drizzle of olive oil, and 1/4 TSP salt and pepper.
Place on a baking sheet, and roast in a 450 degree oven for 15 minutes.
Step 3: Mix Mayo
In a small bowl combine mayo, sweet chili sauce, and 1/4 TSP salt and pepper. Mix well.
Step 4: Form and Cook Patties
In a large bowl, combine ground turkey, ginger, scallions, ponzu, bouillon paste, panko, and 1/4 TSP salt and pepper.
Mix until throughly combined.
Form into meatballs.
Heat a large pan with a drizzle of olive oil on medium heat. Place meatballs into pan, and press down creating patties. cook for 3 minutes per side.
Step 5: Make Salad
In a large bowl, toss together roasted broccoli, cabbage, ginger dressing, scallions, sweet chili sauce, and 1/4 TSP salt and pepper.
Mix well.
Step 6: Finish and Serve
Divide patties and salad between plates.
Drizzle with sweet chili mayo, and garnish with scallions.
I combined my meal with leftover rice,but this is optional.
