Gouda Stuffed Meatloaves With Garlic Herb Potatoes, Parsnips, And Carrots

DIFFICULTY LEVEL: Easy

INGREDIENTS: Potatoes, Carrots, Parsnips, Parsley, 1/8 Cup Ketchup, 1 TSP Sriracha, 1 TSP Garlic Powder, 1 TBSP Fry Seasoning, 1/8 Cup Aprcot Jam, Ground Beef, 2 Slices of Gouda Cheese, 1 TBSP Beef Bouillon Paste, 1/4 Cup Panko Bread Crumbs


Step 1: Prep and Mix Glaze

Adjust rack to middle position, and preheat oven to 425 degrees

Wash and dry produce

Quarter potatoes

Slice carrots and parsnips into slices

Roughly chop parsley

Quarter gouda

In a small bowl, combine ketchup, jam, and Sriracha.

Mix well

Set glaze aside

Step 2: Toss and Roast Vegetables

In a large microwave safe bowl, combine 2 TBSP of butter, garlic powder, and 1/4 TSP of salt and pepper

Microwave for 40 seconds

Add potatoes, carrots, and Parsnips to melted butter mixture

Mix well

Transfer vegetables to half of baking sheet

Roast for 5 minutes

Step 3: Form Meatloaves

In bowl used for vegetables, soak panko with bouillion paste and 1 TBSP of water, stir until pasty

Add ground beef, fry seasoning, and 1/4 TSP of salt and pepper. Mix to combine

Form meat mixture into two 1/2 inch rounds

Dividing evenly, place gouda into the center of each round

Gently fold meat around cheese, shapping and sealing to create 1 inch tall loaves

Step 4: Roast and Glaze

Once vegetables have roasted for 5 minutes, remove sheet pan from oven

Carefully place meatloaves, seam side down on opposite side of vegetables

Transfer half of the glaze to a second bowl and reserve

Brush meatloaves with remaining glaze

Roast on top rack for 13 minutes

Step 5: Finish Meatloaves

Remove sheet pan with meatloaves from oven, and carefully brush meatloaves with reserved Glaze

Return to oven and roast for 3 minutes, or until meat is cooked through

Step 6: Finish and Serve

Divide vegetables and meatloaves between plates

Top with parsley

Serve hot and enjoy!
