Turkey Ragu Spaghetti With Zucchini and Parmesan


PREP TIME: 10 Minutes/ COOK TIME: 20 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Zucchini, Spaghetti, 1 TBSP Tuscan Heat Spice, 1 TSP Garlic, 1/8 Cup Tomato Paste, 1/2 Cup Marinara Sauce, 2 TBSP Cream Cheese, 2 TBSP Sour Cream, 3 TBSP Parmesean Cheese, 1 TBSP Chicken Bouillon Paste, Ground Turkey


Step 1: Prep

Bring a large pot of salted water to a boil

Wash and dry produce

Trim zucchini, quarter into half moons

Step 2: Cook Pasta

Once water is boiling, add spaghetti

Cook for 11 minutes

Reserve 1/4 Cup pasta cooking water, the drain

Step 3: Make Sauce

Heat a drizzle of oil in a large pan over medium heat

Add turkey, tuscan spice, garlic powder, and 1/4 TSP of salt and pepper. Breaking meat into pieces

Cook for 4 minutes

Add zucchini, and tomato paste

Cook for 3 minutes more

Stir in marinara sauce, bouillion paste, reserved pasta water

Simmer for 2 minutes

Reduce heat to medium low

Stir in cream cheese, sour cream, half the parmesean, 1 TBSP of butter, and 1/4 TSP of salt and pepper

Step 4: Finish and Serve

Add pasta to pan with sauce, toss to coat

Divide between plates, sprinkle with remaining parmesean

Serve hot and enjoy!
