Prosciutto Wrapped Chicken

Prosciutto Wrapped Chicken Roulade With Apple Pan Sauce, Parsnip Mashed Potatoes, And Roasted Green Beans


PREP TIME: 10 Minutes/ COOK TIME: 60 Minutes

DIFFICULTY LEVEL: Medium 

INGREDIENTS: Parsnips, Potatoes, Green Beans, Sage, Ginger, Apple, 2 TBSP Creme Fraiche, 1 TSP Garlic Powder, 1 TBSP Miso Paste, Prosciutto, 1/2 Cup Mozzarella Cheese, Chicken Cutlets


Step 1: Prep

Adjust rack to middle position, and preheat oven to 425

Wash and dry produce

Trim, peel, and dice parsnips

Dice potatoes

Trim green beans

Pick half the sage leaves from stems. Roughly chop leaves until you have 2 TSP

Peel and mince ginger

Core and dice apple

Step 2: Make Parsnip Mash

Place parsnips and potatoes in a large pot with salted water

Bring to a boil

Cook for 16 minutes

Reserve 1/4 cup of potato liquid, then drain

Return parsnips and potatoes to pot

Add creme fraiche, 2 TBSP of butter, cooking liquid, and 1/4 TSP of salt and pepper

Mash until smooth

Step 3: Prep and Roll Chicken

While potatoes cook, pat chicken dry with paper towels

Place Chicken between 2 large pieces of plastic wrap, and pound with a mallet until chicken is 1/4 Inch thick

Peel off top layer of plastic wrap

Season top half of chicken with half of garlic powder, and 1/4 TSP of salt and pepper

Keeping the chicken on the plastic wrap, position the pieces perpendicular to the edge of work surface

Divide mozzarella among bottom halves of each chicken cutlet

Rolling upward, and away from you. Removing plastic wrap as you roll

Step 4: Wrap and Sear Chicken

Lay 2 pieces of prosciutto beside each other on a work surface

Place Chicken Roulade along bottom of slices, tightly roll up prosciutto and Chicken Roulade

Heat a drizzle of oil in a large pan over medium heat .Add chicken roulades

Sear for 3 minutes per side

Turn off heat

Step 5: Roast Beans And Chicken

While chicken sears, toss green beans with a drizzle of oil, and 1/4 TSP of salt and pepper on one side of baking sheet

Once chicken is done searing, transfer to empty side of same sheet

Roast on top rack until chicken is cooked through

Cook for 15 minutes

Step 6: Make Apple Pan Sauce

Meanwhile, heat 2 TBSP of butter in same pan used for chicken on medium heat

Add apple, and 1/4 TSP of salt and pepper

Cover with a lid, and cook for 5 minutes

Add 3/4 Cup water, chopped sage, minced ginger, miso sauce, remaing garlic powder, and 1 TSP of sugar

Simmer for 6 minutes

Step 7: Finish and Serve

Slice Chicken

Divide chicken, mash, and green beans between plates

Spoon pan sauce over chicken and mash

Serve hot and enjoy!
