Honey Shrimp

Sweet Soy Honey Shrimp With Green Beans and Jasmine Rice


PREP TIME: 10 Minutes/ COOK TIME: 20 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 590/ Protein 38g

DIFFICULTY LEVEL: Easy 

INGREDIENTS: 1 TBSP Sesame Seeds, Ginger, Shrimp, ½ Cup Jasmine Rice, 4 TBSP Sweet Soy Glaze, 2 TSP honey, Scallions, Sriracha, Green Beans


Step 1: Cook Rice

Adjust top rack of oven to top position, and preheat to 425

Wash and dry produce

In a small pot, melt 2 TBSP of butter

Combine rice, ¾ cup of water, and ¼ TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

Step 2: Roast Green Beans

While rice cooks, trim green beans

Toss on a baking sheet with a drizzle of oil, and ¼ TSP of salt and pepper

Roast for 15 minutes

Step 3: Prep and Make Sauce

Meanwhile, trim scaillions. Separating whites from greens

Peel and mince ginger

In a small bowl, combine soy glaze, honey, 2 TBSP of water, and Sriracha

Mix well

Step 4: Cook Shrimp

Trim and devain shrimp

Heat a large pan over medium heat

Add shrimp in a single layer

Season with ¼ TSP of salt and pepper

Cook for 5 minutes

Step 5: Coat Shrimp

Once shrimp has cooked, add scallion whites and ginger

Pour sweet soy honey sauce, cook until sauce has thickened for 3 minutes

Step 6: Finish and Serve

Fluff rice with a fork, and season with salt and pepper

Divide rice, green beans, and shrimp between plates

Garnish with scallion greens and Sesame seeds

Serve hot and enjoy
