Mexican Beef Bowls

Mexican Beef and Black Bean Rice Bowls With Bell Pepper, Cotija, Fresh Salsa and Lime


PREP TIME: 10 Minutes/ COOK TIME: 25 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 1150/ Protein 51g

DIFFICULTY LEVEL: Easy

INGREDIENTS: 1 Cup Black Beans, Lime, Green Bell Pepper, Ground Beef, ½ Cup Fresh Salsa, 1 TBSP Mexican Spice Blend, ¾ Cup Jasmine Rice, Cilantro, Red Onion, ½ Cup Cojita Cheese, Corn( Optional)


Step 1: Cook Rice

In a small pot, melt 2 TBSP of butter

Combine rice, 1.25 cups of water, and ¼ TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered off heat until ready to serve

Step 2: Prep

While rice cooks, wash and dry produce

Halve, peel, and dice half the onion

Thinly slice remaining onion into strips

Zest and quarter lime

Halve, core, and thinly slice bell pepper into strips

Finely chop cilantro

Step 3: Cook Beans

Heat a drizzle of oil in a medium pot over medium heat

Add diced onion, ½ TSP sugar, salt, and pepper

Cook, stirring until softened. Cooking for 4 minutes

Add beans and their liquid, half the Mexican spice blend, ½ TSP salt and pepper

Cook until thickened for 10 minutes

Turn off heat, stir in 1 TBSP butter, and a squeeze of lime juice

Keep covered off heat until ready to serve

Step 4: Cook Veggies

While beans cook, heat a drizzle of oil in a large pan over medium heat

Add sliced onion, bell pepper, and ¼ TSP of salt and pepper

Cook for 4 minutes

Step 5: Cook Beef

To pan with Veggies Add beef, remaining Mexican spice blend, and ¼ TSP of salt and pepper

Cook breaking up meat into pieces, cook for 6 minutes

Step 6: Finish and Serve

Fluff rice with fork and stir in lime zest, 1 TBSP butter, ¼ TSP salt and pepper

Divide rice between shallow bowls

Top with beef and vegetables, beans, salsa, cotija and cilantro

Serve with remaining lime wedge on the side
