Miso Butter Braised Cabbage w/ Lo Mein

MISO BUTTER BRAISED CABBAGE OVER LO MEIN WITH CARROTS, CASHEWS, AND CRISPY FRIED ONIONS

INGREDIENTS:  Scallions, Cashews, 1/3 Cup Miso Butter, 1/3 Cup Vidalia Onion Paste, 2 TBSP Soy Sauce, 1 TSP Garlic Powder, 1/3 Cup Crispy Fried Onions, 1/3 Cup Thai Chili Sauce, Shredded Carrots, Lo Mein Noodles, 1/3 Cup Rice Wine Vinegar, Corn Head Cabbage

Step 1: Prep

Preheat oven 375 degrees. Bring a medium pot of salted water to a boil. Wash and dry produce.

Quarter cabbage, thinly slice scallions, roughly chop cashews.

In a small bowl, whisk together miso butter, and 3/4 cup of water until smooth.

Step 2: Sear and Braise Cabbage

Heat 2 TBSP butter, and a drizzle of oil in a large oven proof pan over medium heat. Add cabbage cut side down. Cook for 4 minutes. Flip cabbage second side down. Cook for 4 more minutes.

Add 1 TBSP vinegar to pan cook undisturbed until vinegar has mostly reduced for 20 seconds.

Stir in miso mixture, bring liquid to a boil. Once boiled, turn off heat.

Bake in oven for 25 minutes.

Step 3: Cook Noodles

Once water is boiled, add noodles to pot. Cook for 7 minutes.

Drain noodles and rinse in cold water. Shake off excess water, and set aside.

Step 4: Make Soy Chili Sauce

In a bowl used for miso mixture, whisk together vidalia onion paste, soy sauce, chili sauce, remaining vinegar, and 1/4 cup water until smooth.

Step 5: Cook Carrots

Heat a large drizzle of olive oil in pot used for noodles over medium heat. Add carrots, scallions, and 1/4 TSP salt and pepper.

Cook for 2 minutes.

Add garlic powder, and cashews.

Cook for 60 seconds.

Step 6: Finish Noodles

Add drained noodles, soy chili sauce and 1 TBSP butter pot with carrot mixture. Cook until butter has melted, season with 1/4 TSP salt and pepper.

Step 7:

Divide carrots and cashew lo mein between shallow bowls, top with braised cabbage. Spoon over miso butter sauce. Garnish with crispy fried onions, and scallions.

Serve hot and enjoy!
