Spicy Miso Rigatoni
SPICY MISO RIGATONI WITH BACON, PLUS CARMELIZED SHALLOT, ZUCCHINI AND PARMESEAN

INGREDIENTS: Bacon, Zucchini, Shallot, Scallions, 2 TBSP Miso Sauce Concentrate, 2 TBSP Pork Ramen Stock Concentrate, 1 TBSP Garlic Powder, 2 TBSP Sriacha, Parmesean Cheese, Rigatoni Pasta, 2 TBSP Sour Cream
Step 1: Cook Bacon
Bring a large pot of salted water to a boil
Heat a large pan over medium heat. Add bacon, turning occasionally. Cook for 10 minutes
Once bacon is cool enough to handle, roughly chop
Step 2: Prep
While bacon cooks, wash and dry produce
Trim and halve zuccini into half moons, halve peel and thinly slice scallions
Step 3: Cook Pasta
Once water is boiling, add rigatoni to pot. Cook for 11 minutes.
Drain
Step 4: Cook Vegetables
While pasta cooks, in same pan from bacon, over medium heat, add a drizzle of oil, add zucchini, shallot, and scallions. Cook for 4 minutes
Step 5: Finish Pasta
Add miso concentrate, pork ramen stock, garlic powder, sriaha, 1/2 cup of cold water, and 1/4 TSP of sugar. Stir to combine. Bring to a simmer.
Once sauce is simmering, add drained rigatoni, and half of the bacon. Cook tossing until pasta is evely covered 1-3 minutes
Turn off heat, stir in sour cream, 2 TBSP of Salt and pepper, and 1/4 TSP of salt and pepper
Step 6: Finish and Serve
Divide pasta bewteen bowls, top with parmesean, scallions, and remaining bacon
Serve hot and Enjoy!
