Pork Noodle Stir-fry
SWEET AND SPICY PORK NOODLE STIR FRY WITH BOK CHOY, CABBAGE, CILANTRO, AND PEANUTS

DIFFICULTY LEVEL: EasyINGREDIENTS: 1/4 Cup Sweet Thai Chili Sauce, Ground Pork, Bok Choy and Napa Cabbage, 1/4 Cup Sweet Soy Glaze, 1 TSP Garlic Powder, Lo Mein Noodles, Peanuts, 1 TSP Korean Chili Flakes, Cilantro, Scallions, Lime, Green Bell Pepper
Step 1: Prep
Bring a large pot of salted water to a boil
Wash and dry produce
Roughly chop peanuts
Trim and thinly slice scallions
Halve, core, and thinly slice bell peppers
Zest and quarter lime
Roughly cilantro
Step 2: Cook Noodles
Once water is boiling, add noodles to pot
Cook for 7 minutes
Drain and set aside
Step 3: Cook Pork and Vegetables
Add a drizzle of olive oil to a large pan over medium heat
Add ground pork, and 1/4 TSP of salt and pepper. Breaking up meat into smaller pieces
Cook for 4 minutes
After pork has cooked, add to pot peanuts, korean chili flakes, scallions, bell pepper, garlic powder, bok choy and napa cabbage, sweet soy glaze, chill sauce, 1 TBSP of butter, and 1/4 TSP of salt and pepper
Cook for 7 minutes
Step 4: Finish and Serve
Add drained noodles, squeeze of lime juice, lime zest, and 1/4 TSP of salt and pepper. Mix well
Top with peanuts, scallions, and cilantro
Serve with remaining lime wedge on the side
Serve hot and enjoy!
