Prosciutto Tortellini

CREAMY TORTELLINI AND CRISPY PROSCIUTTO WITH PEAS AND PARMESAN


PREP TIME: 5 Minutes/ COOK TIME: 20 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Cheese Tortellini, Prosciutto, Cream Base Sauce, Peas, Parmesean Cheese Block


Step 1: Cook Tortellini

Bring a large pot of salted water to a boil

Once water is boiling, add tortellini to pot

Cook for 5 minutes

Reserve 1/2 cup of pasta cooking water, then drain

Rinse in cold water, drain off excess

Step 2: Cook Prosciutto

While Tortellini cooks, tear Prosciutto into bite size pieces

Heat a drizzle of oil in a large pan over medium heat

Add prosciutto, and cook for 3 minutes

Turn off heat, and transfer to a paper towel lined plate

Step 3: Cook Sauce

Add cream sauce base, pasta cooking water, 2 TBSP of butter, and 1/4 tsp of salt and pepper to pan used for Prosciutto over medium low heat

Grate half the parmesean cheese over pan

Cook for 3 minutes or until thickened

Remove from heat

Step 4: Finish and Serve

Add drained tortellini to pan with sauce

Stir in peas, and toss until coated

Season with 1/4 TSP of salt and pepper

Divide pasta between shallow bowls, top with Prosciutto, and grate remaining parmesean cheese

Serve hot and enjoy!
