Onion Pasta Bake
MUSHROOM AND CARAMELIZED ONION PASTA BAKE WITH CHEDDAR, AND CRISPY PARMESAN PANKO

DIFFICULTY LEVEL: HardINGREDIENTS: Onion, Scallions, 1 Cup Cream Sauce Base, 2 TBSP Cream Cheese, Cavatappi Pasta, White Cheddar Cheese, Mushrooms, Parmesean Cheese, 1/4 Cup Panko Bread Crumbs, 1 TBSP Vegetable Bouillon Paste
Step 1: Prep and Mix Panko
Preheat oven to 450 degrees
Wash and dry produce
Bring a large pot of salted water to a boil
Trim and thinly slice mushrooms
Halve, peel, and thinly slice onions
Trim and thinly slice scallions
In a small bowl, combine panko, half the parmesean, a drizzle of olive oil, and 1/4 TSP of salt and pepper. Mix well. Set aside
Step 2: Cook Mushrooms
Heat a large pan with a drizzle of oil on medium heat
Add mushrooms, and 1/4 TSP of salt and pepper
Cook for 7 minutes
Turn off heat. Transfer to a plate
Step 3: Cook Pasta
Once salted water has come to a boil, add pasta
Cook for 11 minutes
Reserve 1/2 cup of pasta water. Drain remainder
Set aside
Step 4: Cook Onions
Heat a drizzle of oil in pan used for mushrooms on medium heat
Add onions and scallions
Cook for 8 minutes
Reduce heat to low
Add 1 TSP of sugar and 1 TBSP of water
Cook for 2 minutes
Season with 1/4 TSP of salt and pepper
Step 5: Cook Sauce
To pan with onions mixture, combine mushrooms, cream sauce base, vegetable bouillon paste
Cook for 2 minutes
Stir in cream cheese, cheddar cheese, remaining parmesean cheese, 2 TBSP of butter, and 1/4 TSP of salt and pepper
Mix well
Add reserved pasta water until desired consistency if sauce is too thick
Add pasta
Mix well until combined with sauce
Step 6: Assemble and Bake Pasta
Transfer pasta and sauce into a baking dish
Evenly spread with panko mixture
Bake for 4 minutes
Step 7: Finish and Serve
Divide pasta into shallow bowls
Garnish with scallions and parmesean cheese
Serve hot and enjoy!
