Creamy Pesto and Burrata

CREAMY PESTO CAVATAPPI WITH BURRATA, TOMATOES, AND PANKO


PREP TIME: 5 Minutes/ COOK TIME: 20 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 860/ Protein 19g

DIFFICULTY LEVEL: Easy

INGREDIENTS: Tomatoes, Burrata, 1 Cup of Pesto, 2 TBSP Creme Fraich, Cavatappi Pasta, 1 Cup of Bread Crumbs


Step 1: Prep

Wash and dry produce

Bring a large pot of salted water to a boil

Heat broiler to high

Trim and halve tomatoes, cutting into half moons

Step 2: Boil Pasta and Mix Panko

Once water is boiling, add cavatappi

Reserve 1/2 Cup of pasta water

Cook for 11 minutes

While pasta cooks, in a small bowl, combine panko, 1 TBSP of oil, 1/4 TSP of salt and pepper, and mix well

Step 3: Make Sauce

In a large pan over medium heat, drizzle oil. Add tomatoes, and 1/4 TSP of salt and pepper

Cook for 4 minutes

Stir in pesto, creme fraiche, drained Cavatappi, reserved pasta water, and 2 TBSP of butter

Cook for 2 minutes

Season with 1/4 TSP of salt and pepper

Step 4: Finish and Serve

Evenly top pasta with panko mixture

Tear Burrata into bite size pieces and arrange on top of pasta

Broil on top rack for 4 minutes

Divide pasta between shallow bowls and serve

Serve Hot and Enjoy!
