Steak Pineapple Mojo
STEAK AND PINEAPPLE MOJO WITH PINEAPPLE CUCUMBER SALAD AND CILANTRO RICE
PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

INGREDIENTS: Pineapple, Onion, Lime, Cilantro, 1 TBSP Garlic Powder, 2 TBSP Cuban Spice Blend, Mini Cucumber, Steak, 3/4 Cup Jasmine Rice
Step 1: Prep
Wash and dry produce
Dice pineapple
Trim and dice cucumber
Halve, peel onion. Dice one quarter, and thinly slice remainder
Roughly chop cilantro
Quarter lime
Step 2: Cook Rice
In a small pot, 2 TBSP of butter, combine rice, 1.25 cups of water, and 1/4 TSP of salt and pepper
Bring to a boil
REDUCE HEAT TO LOW AND COVER
Simmer for 15 minutes
Keep covered and off heat until ready to serve
Step 3: Make Salad
While rice cooks, in a medium bowl combine drained pineapple, cucumber, diced onion, half the cilantro, half of the garlic powder, 1 TBSP of oil, 1/2 tsp of sugar, and juice from half the lime. Season with salt and pepper.
Refrigerate until ready to serve
Step 4: Cook Steak
Pat steak dry with paper towels. Season all over with half the Cuban spice blend. And 1/4 tsp salt and pepper
Heat a large drizzle of oil in a large pan over medium heat. Add steaks and cook for 4 minutes or until desired doneness.
Flip, and cook for 3 more minutes ( this is for medium rare)
Transfer to cutting board to rest for 5 minutes before slicing
Step 5: Make Mojo Sauce
Heat a drizzle of oil in a pan used for steak over medium heat. Cook for 4 minutes
Add pineapple juice, remaining Cuban spice blend, remaining garlic powder, and 1 tsp sugar. Cook for 2 minutes
Add 1/4 cup of water. Stir for 2 minutes
Remove from heat. Stir in 2 TBSP of butter, until melted. Add juice from one lime. Season with 1/4 TSP of salt and pepper
Step 6: Finish and Serve
Slice steak
Fluff rice with a fork
Divide rice, steak, and pineapple salad between shallow bowls. Drizzle steak and rice with mojo sauce
