Cranberry Pork Meatloaves

CHIPOTLE CRANBERRY PORK MEATLOAVES WITH ROASTED BRUSSELS SPROUTS, MASHED SWEET POTATO, AND GRAVY

INGREDIENTS: Sweet Potato, Shallots, Brussels Sprouts, Garlic Powder, Ketchup, Chipotle Powder, 1 TBSP Flour, 2 TBSP Sour Cream, 1/8 Cup of Cranberry Jam, 1/4 Cup Panko Bread Crumbs, 2 TBSP Dijon Mustard, 2 TBSP Vegetable Bouillon Paste, Ground Pork


Step 1: Prep

Wash and dry produce

Preheat oven to 425 degrees

Peel and dice sweet potato

Halve and peel shallot. Grate one half on largest holes of grater. Mince remaining shallot

Trim and halve brussels sprouts

Step 2: Cook Sweet Potatoes

Place Sweet Potatoes in a large pot with salted water, coving potatoes by 2 inches

Bring to a boil

Boil for 15 minutes

Reserve 1/4 Cup of potato liquid, then drain

Return potatoes to pot and cover to keep warm until ready to mash

Step 3: Form Loaves and Make Glaze

While Sweet Potatoes cook, to a bowl add grated Shallots, ground pork, garlic powder, panko, half the ketchup, and 1/4 TSP of salt and pepper

Form into mini meatloaves

Place meatloaves on one side of baking sheet

In a small bowl combine jam,half the chipotle powder, remaining ketchup, and 1/4 TSP of salt and pepper

Mix until smooth

Step 4: Roast Loaves and Sprouts

Toss brussels sprouts on opposite side of sheet with meatloaves with a drizzle of olive oil, and 1/4 tsp of salt and pepper

Roast on top rack for 15 minutes

Step 5: Make Gravy

Meanwhile melt 1 TBSP of butter in a medium pan over medium heat

Add minced shallot

Cook for 3 minutes

Sprinkle with flour, stir to combine

Whisk in bouillion paste, mustard, and 1/2 cup of water

Bring to a simmer, and cook for 3 minutes

REDUCE HEAT TO LOW until ready to serve, stirring occasionally

Step 6: Glaze and Mash

Once meatloaves have cooked for 15 minutes, remove sheet from oven

Carefully brush meatloaves with glaze

Return to oven, and cook for 6 more minutes

To pot with drained sweet potatoes, add sour cream, 1 TBSP of butter, and a pinch of chipotle powder, adding splashes of reserved potato cooking liquid as needed until smooth and creamy

Step 7: Finish and Serve

Slice meatloaves

Divide meatloaves, mashed sweet potatoes, and brussels sprouts between plates in separate sections

Spoon gravy over meatloaves and serve hot and enjoy!
