Sweet Thai Chili Salmon
SWEET THAI CHILI SALMON WITH ZESTY RICE AND ROASTED BROCCOLI

INGREDIENTS: Broccoli, Shallots, Lime, Cilantro, 1/8 Cup Sweet Thai Chili Sauce, 2 TBSP Ponzu Sauce,1/2 Cup of Jasmine Rice, 2 TBSP Vegetable Bouillon Paste, Salmon
Step 1: Prep
Wash and dry produce
Preheat oven to 450 degrees
Cut broccoli into florets
Halve, peel, and mince shallot
Zest and quarter lime
Roughly chop cilantro
Step 2: Cook Rice
In a small pot, combine 2 TBSP of Butter, 1 cup of water, and 1/4 TSP of salt and pepper
Bring to a boil
REDUCE HEAT TO LOW, AND COVER
Simmer for 15 minutes
Keep covered and off heat until ready to serve
Step 3: Roast Broccoli
Toss broccoli with a drizzle of oil, 1/4 TSP of salt, pepper, all purpose seasoning, and paprika
Roast for 12 minutes
Step 4: Make Pan Sauce
Heat a drizzle of oil in pan used for pork over medium heat
Add shallot, and cook for 2 minutes
Stir in bouillion paste, chili sauce, ponzu, and 1/4 Cup of water
Bring to a simmer, and cook for 3 minutes
Stir in a big squeeze of lime juice, stir in 1 TBSP of butter until melted
REDUCE HEAT TO LOW, and simmer until ready to serve. Stirring occasionally
Step 5: Cook Fish
While rice cooks, pat salmon dry with paper towels
Season all over with 1/4 TSP of salt, pepper, all purpose seasoning, and paprika
Heat a large drizzle of oil in a large pan over medium heat
Add salmon, skin side down, cook for 7 minutes
Flip and cook for 2 more minutes
Transfer to cutting board to rest
Step 6: Finish and Serve
Fluff rice with fork, stir in lime zest, and half of the cilantro
Divide rice, broccoli, and salmon between plates
Top salmon with pan sauce
Garnish everything with remaining cilantro
Serve with lime wedge on the side
Serve hot and enjoy!
