Grass Fed Rib Eye Steak And Asparagus Fries With Gouda Mashed Potatoes, Lemon Aioli, BBQ Butter


PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 1480/ Protein 60g

DIFFICULTY LEVEL: Medium 

INGREDIENTS: Gouda Chees, 2 TBSP Sour Cream, Grass Fed Rib Eye Steak, Tempura Batter Mix, Parsley, 1 TSP Garlic Powder, 1/8 BBQ Sauce, 1 TBSP Fry Seasoning, Potatoes, Asparagus, Lemon, Chives, 1/8 Cup Mayo


Step 1: Prep

Adjust rack to middle position, and preheat oven to 425

Place 2 TBSP butter in a small microwave safe bowl, bring to room temperature

Wash and dry produce

Peel and dice potatoes

Zest and quarter lemon

Trim and discard woody bottom ends from asparagus

Halve asparagus crosswise

Roughly chop parsley

Finely slice chives

Step 2: Make Mashed Potatoes

Place potatoes in a medium pot with enough salted water to cover by two inches

Bring to a boil and cook until tender, for 15 minutes

Reserve 1/4 cup potato cooking liquid, then drain

Return potatoes to pot and add sour cream, half the garlic powder, and 2 TBSP of butter

Mash with a potato masher until smooth. Add splashes of potato water as needed

Season with 1/4 TSP of salt and pepper

Arrange gouda over mashed potatoes and keep covered of heat until ready to serve

Step 3: Make Aioli

While potatoes cook, in a small bowl combine mayo, lemon zest, remaining garlic powder, a squeeze of lemon juice, and 1/4 TSP of salt and pepper

Refrigerate until ready to serve

Step 4: Cook Steak

Pat steak dry with paper towels

Season all over with 1/4 TSP of salt and pepper

Heat a large pan on medium heat with a large drizzle of oil

Add steak, cook for 3 minutes per side

Turn off heat. Transfer steak to baking sheet. Roast on top rack for 12 minutes

Transfer steak to a cutting board, cover with foil, and let rest for at least 8 minutes

Step 5: Batter And Fry Asparagus

In a medium bowl, whisk together tempura batter mix, half the fry seasoning, 1/4 cup of water, and 1/4 TSP of salt and pepper

Add asparagus and stir until til coated

Heat a 1/3 inch layer of oil in pan used for steak over medium heat

Once oil is hot enough ( sizzles when batter is dropped), add asparagus

Cook for 3 minutes per side

Transfer to paper towel lined plate

Season all over with 1/4 TSP of salt and pepper

Step 6: Make BBQ Butter

Add parsley, and half the BBQ sauce to bowl softened with butter, stir to combine

Step 7: Finish and Serve

Slice steak against the grain

Divide steak, cheesy mashed potatoes, and fried asparagus between plates

Top steak with BBQ butter, garnish mashed potatoes with chives

Serve with lemon aioli, remaininh bbq sauce, and remaing lemon wedge on the side

Serve hot and Enjoy!
