Dijon Salmon

DIJON SALMON WITH POTATO WEDGES AND ZESTY GREEN BEANS


PREP TIME: 5 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: MEDIUM
INGREDIENTS:  Lemon, Fry Seasoning, Green Beans, Salmon, Potatoes, Honey Dijon Dresing

Step 1: Prep

Preheat Oven to 450. Wash and dry produce. Cut potatoes into wedges, Zest and quarter lemon, trim green beans.

Step 2: Roast Potatoes

Toss potatoes in a large bowl with 2 TBSP oil, 1 TBSP Fry seasoning, 1/4 TSP of Salt and Pepper. Place on one side of baking sheet, spreading evenly.

Roast on top rack for 10 minutes.

Step 3: Roast Green Beans

Once potatoes have roasted, toss green beans in 1 TBSP olive oil, 1/4 TSP salt and pepper.

Place on other half of baking sheet.

Roast on top rack for 15 minutes.

Once green beans have roasted, toss with 1/4 tsp of salt and lemon zest.

Step 4: Cook Fish

While veggies roast, pat salmon dry with paper towels, season with salt and pepper.

Heat a drizzle of oil in a large pan, over medium heat. Add salmon skin side down and cook until browned 5-7 minutes. Flip and cook salmon until opaque, and cook through 1-2 minutes more.

Step 5: Make Sauce

On medium heat, add honey Dijon dressing, 2 TBSP of water, 1/2 squeezed lemon juice, simmer until thickened for 2 minutes.

Step 6: Serve

Divide salmon, potatoes, and green beans between plates. Spoon sauce over salmon. Serve with remaining lemon wedges On the side.
