Seared Salmon And Creamy Tuscan Linguine With Spinach And Tomato


PREP TIME: 10 Minutes/ COOK TIME: 20 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 900/ Protein 42g

DIFFICULTY LEVEL: Easy

INGREDIENTS: 1 TBSP Tuscan Heat Spice, Salmon, Vegetable Bouillon Paste, Spinach, Cream Sauce Base, Linguine Pasta, Tomato, Scallions


Step 1: Prep

Bring a large pot of salted water to a boil

Wash and dry produce

Trim and thinly slice scallions, separating white from greens

Dice tomatoes

Step 2: Cook Pasta

Once water is boiling, add Linguine to pot

Cook for 11 minutes

Reserve 1 cup of pasta water, then drain remaining

Step 3: Cook Salmon

Pat salmon dry with paper towels, and season all over with 1/4 TSP of salt and pepper

Heat a drizzle of oil in a large pan over medium heat

Add salmon, skin side down

Cook for 7 minutes

Flip and cook for 2 minutes more

Turn off heat, transfer to a plate, and tent with foil to keep warm until ready to serve

Step 4: Make Sauce

Add another drizzle of oil in pan used for salmon, and add scallion whites

Cook for one minute

Add tomato, bouillion paste, cream sauce base, half the tuscan heat spice, and 1/4 TSP of salt and pepper

Cook for 4 minutes

Remove pan from heat

Step 5: Finish Pasta

Add spinach to pan with sauce, stir until wilted

Add drained pasta, and 1 TBSP of butter, until melted

Season with 1/4 TSP of salt and pepper

Step 6: Finish and Serve

Divide pasta between bowls

Top with salmon, and garnish with scallion greens
