Shepherds Pie

PUB - STYLE SHEPHERDS PIE WITH WHITE CHEDDAR MASHED POTATOES


PREP TIME: 10 Minutes/ COOK TIME: 60 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Celery, Onion, Potatoes, Carrots, English Peas, 2 TBSP Sour Cream, 1 TBSP Garlic Powder, 2 TBSP Tomato Paste, 2 TBSP Flour, 2 TBSP Beef Bouillon Paste, 1 Cup White Cheddar Cheese, Ground Beef, 1 TBSP Dried Thyme


Step 1: Prep

Heat broiler to high

Wash and dry produce

Dice potatoes, halve carrots, finely dice celery, rinse english peas, halve peel and finely dice onion

Step 2: Make Mashed Potatoes

Place potatoes in a medium pot with salted water

Bring to a boil

Cook for 20 minutes

Reserve 1/2 of potato water

Drain and return potatoes to pot

Mash with sour cream, 2 TBSP of butter, adding splashes of reserved potato liquid until desired texture

Season with 1/4 TSP salt and pepper

Keep covered and off heat until ready to serve

Step 3: Start Filling

While potatoes cook, heat a drizzle of oil in a large oven proof pan over medium heat. Add carrots, and 1/4 TSP of salt and pepper

Cook for 3 minutes

Add a large drizzle of olive oil, celery, onion, english peas, and 1/4 TSP salt and pepper

Cook for 7 minutes

Stir in garlic powder, and thyme

Cook for 1 minute

Step 4: Cook Beef

Add beef to pan with vegetables, season with 1/4 TSP of salt and pepper, breaking up meat into small pieces

Cook for 6 minutes

Add tomato paste, and flour

Cook for 1 minute

Step 5: Finish Filling

Gradually pour 1/2 cup of water into pan with beef mixture

Stir in beef bouillion paste, and bring to a boil

Cook for 2 minutes

Season with 1/4 TSP salt and pepper

Step 6: Finish and Serve

Top beef filling with an even layer of mashed potatoes

Sprinkle with white cheddar cheese

Broil for 4 minutes

Serve hot and enjoy!
