Peruvian Chicken
SPICY PERUVIAN CHICKEN WITH BACON, LOADED RICE, PICKLED JALAPENO, CREAMY SALSA VERDE

INGREDIENTS: Garlic, Scallions, Jalapeños, Lime, Tomato, 1 TBSP Fajita Spice Blend, Bacon, 1/8 Cup Mayo, 2 TBSP Sour Cream, 3/4 Cup Jasmine Rice, 2 TBSP Chicken Bouillon Paste, Chicken Cutlets
Step 1: Prep
Wash and dry produce
Peel and mince garlic, trim and thinly slice jalapeno into rounds, zest and quarter lime, and dice tomato
Step 2: Cook Rice
Melt 2 TBSP butter, add Scallions, minced garlic, and 1 TSP Fajita Spice Blend.
Cook for 3 minutes
Stir in rice, chicken bouillion paste, 1.25 cups of water, and 1/4 TSP of salt
Bring to a boil. Once boiled, REDUCE HEAT TO LOW, AND COVER
Cook for 15 minutes
Keep covered and off heat until ready to serve
Step 3: Pickle Jalapeño and Cook Bacon
In a small microwave safe bowl, combine Jalapeño, juice from half the lime, 1/4 TSP sugar, 1/4 TSP of salt. Mix well
Heat a medium pan over medium heat. Add bacon, cook for desired doneness , 10 minutes per side for crispy
Turn off heat, transfer to a paper towel lined plate. Once cool enough to handle, roughly chop
Step 4: Cook Chicken
Pat chicken dry with paper towels. Season all over with remaining Fajita Spice Blend, and 1/4 TSP salt and pepper
Heat a large drizzle of oil in a large pan over medium heat. Add chicken
Cook for 7 minutes per side
Transfer to cutting board to rest
Step 5: Make Creamy Salsa Verde
While chicken cooks, remove Jalapeño from pickling liquid. Reserve a few rounds for garnish, mince remaining
To bowl, add mayo, sour cream, minced garlic, squeeze of lime juice, lime zest, minced Jalapeño, 1/4 TSP salt and pepper.
Add 1 TSP of water at a time until reaches drizzling consistency
Step 6: Finish and Serve
Fluff rice with fork
Stir in tomato, scallions, lime zest, lime juice, mince Jalapeño, 1/4 TSP salt and pepper
Divide rice bewteen bowls, top with chicken, squeezed lime juice
Drizzle everything with creamy salsa verde
Garnish with bacon, scallions, and Jalapeño rounds
Serve hot and enjoy!
