Southwest Cavatappi
SOUTHWEST BEEF CAVATAPPI WITH GREEN PEPPER AND SMOKY RED PEPPER CREMA

INGREDIENTS: Scallions, 3 TBSP Sour Cream, 3 TBSP Smoky Red Pepper Crema, Mexican Cheese Blend, 1 TBSP Hot Sauce, Long Green Pepper, 1/2 CUP Cavatappi, 1 TBSP Southwest Spice Blend, 2 TBSP Beef Bouillion, 1 Can Crushed Tomato,Ground Beef
Step 1: Prep
Bring a large pot of salted water to a boil. Wash and dry produce
Halve, deseed, and thinly slice green pepper into strips. Trim and thinly slice scallions
Step 2: Cook Pasta and Pepper
Once water is boiling, add cavatappi to pot. Cook for 11 minutes
Reserve 1 cup of pasta cooking water, then drain
Meanwhile heat a large drizzle of olive oil in a medium pan, over medium heat. Add green pepper and season with 1/4 tsp salt and pepper. Cook for 5 minutes
Step 3: Cook Beef
Add a drizzle of oil to pan with green pepper, add beef, and scallion. Season with southwest spice blend, and 1/4 tsp salt and pepper. Cook,breaking up meat into pieces, cook for 6 minutes.
Add crushed tomatoes
Step 4: Cook Sauce
Add 1/2 cup reserved pasta cooking water, and beef bouillion paste to pan with beef mixture. Season with 1/2 tsp salt and pepper. Bring to a simmer, and cook for 3 minutes
Step 5: Finish Pasta
Reduce heat to low and stir in drained cavatappi, sour cream, smoky red pepper crema, mexican cheese blend, 1 TBSP butter, and hot sauce. Season with 1/4 tsp salt and pepper
Step 6: Finish and Serve
Top beef cavatappi with mexicans cheese. Cover pan until cheese melts for 2 minutes. Top with scaillions
