SMOTHERED CHICKEN WITH BACON GRAVY WITH MASHED POTATOES AND BROCCOLI


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

DIFFICULTY LEVEL: MEDIUM
INGREDIENTS: Potatoes, Broccoli, Scallions, 1/3 Cup Sour Cream, 2 TBSP Flour, Bacon, 2 TBSP Creme Fraiche Chicken Cutlets, 2 TBSP Chicken Bouillon Paste

Step 1: Prep

Preheat oven to 425 degrees

Wash and dry produce

Dice potatoes, cut broccoli into florets, thinly slice scallions

Step 2: Make Mashed Potatoes

Add potatoes to a medium pot with enough salted water to cover potatoes. Bring to a boil and cook for 12 minutes. Reserve 1/2 cup potato cooking liquid, then drain

Return potatoes to pot. Mash with sour cream, and 1 TBSP butter until smooth, adding splashes of reserved potato cooking liquids if needed. Season with 1/4 Tsp salt and pepper

Keep covered off heat heat until ready to serve

Step 3: Roast Broccoli

While potatoes cook, toss broccoli with a drizzle of oil, and 1/4 tsp of salt and pepper

Roast in oven for 20 minutes

Step 4: Prep and Cook Chicken

Pat chicken dry with paper towels. Place between two large pieces of plastic wrap, pound with a mallet or heavy bottomed pan until about 1/2 inch thick. Season with 1/4 tsp of salt and pepper

Sprinkle chicken all over with half the flour, pressing to adhere, shake off excess

Heat a large drizzle of oil in a large pan over medium heat. Add coated chicken. Cook for 5 minutes per side

Turn off heat, transfer to a plate

Step 5: Cook Bacon and Start Gravy

Add bacon in a single layer to a pan used for chicken heat over medium high heat. Cook, turning occasionally, until crispy for 6 minutes. Turn off heat, transfer to a paper towel lined plate

Add scallions whites to a pan used for bacon. Cook over medium heat, stirring constantly until softened and fragrant. Cook for 1 minute

Sprinkle remaining flour into pan, stir to combine. Slowly whisk in 3/4 cup water and chicken bouillon paste. Bring to a simmer, and whisk constantly, until thickened for 2 minutes

Stir in Crema fraiche, taste and season with 1/4 tsp salt and pepper

Step 6: Finish Gravy and Chicken

Once bacon is cool enough to handle, finely chop.

Stir in half the chopped bacon into pan with gravy. Transfer chicken to pan, turn to coat

Step 7: Finish and Serve

Divide mashed potatoes, chicken, and broccoli between plates in separate sections. Top chicken and potatoes with remaining bacon gravy. Garnish with scallion greens and remaining chopped bacon.
