Sesame Soy Pork Bowls

SESAME SOY PORK BOWLS WITH SRIRACHA MAYO, CILANTRO, AND CRISPY ONIONS


PREP TIME: 10 Minutes/ COOK TIME: 25 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 1100

DIFFICULTY LEVEL: Easy

INGREDIENTS: Lime, Cilantro, Shredded Carrots, 3/4 Cup of Jasmine Rice, Ground Pork, 2 TBSP Mayo, 1 TBSP Sriacha, 1/8 Cup of Sesame Dressing, 1/8 Cup Sweet Soy Glaze, Crispy Fried Onions


Step 1: Cook Rice

In a small pot, combine 2 TBSP of butter, rice, 1.25 cups of water, and 1/4 TSP of salt and pepper

Bring to a boil

Once boiled, REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Step 2: Prep and Mix Mayo

While rice cooks, wash and dry produce

Zest and quarter lime

Roughly chop cilantro

In a small bowl combine mayonnaise with Sriracha, mix well

Step 3: Make Filling

Heat a drizzle of oil in a large pan over medium heat

Add pork and 1/4 TSP of Salt and Pepper

Cook breaking up meat into small pieces until browned for 4 minutes

Stir in carrots, sesame dressing, 2.5 TBSP of Sweet Soy Glaze, and 1/2 tsp of sugar

Cook for 4 minutes

Season with 1/4 TSP of salt and pepper

Turn off heat

Step 4: Finish and Serve

Fluff Rice with fork, stir in lime zest

Divide rice between bowls

Top with pork mixture, and any remaining sauce from pan

Drizzle with Sriracha Mayo

Sprinkle with crispy fried onions and cilantro

Serve with lime wedges on the side

Serve hot and enjoy!
