Szechuan Hoisin Shrimp Bowls

SZECHUAN HOISIN SHRIMP AND RICE BOWLS WITH MANDRIAN ORANGE AND EDAMAME


PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS:

BELL PEPPER, SCALLIONS, GINGER, GARLIC, EDAMAME, MANDRIAN ORANGE, 3/4 CUP OF JASMINE RICE, 1/8 CUP SZECHUAN PASTE, 2 TBSP SESAME OIL, CLEANED SHRIMP, 2 TBSP RICE WINE VINEGAR, 1/8 CUP HOISIN SAUCE


Step 1: Cook Rice

In a small pot, combine 2 TBSP of butter, rice, 1.25 cups of water, and 1/4 TSP of salt and pepper

Bring to a boil

Once boiled, REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Step 2: Prep

While rice cooks, wash and dry produce

Halve core and dice bell pepper

Trim and thinly slice scallions

Peel and mince ginger

Peel and mince garlic

Peel orange, cut into small pieces

Step 3: Cook Pork and Vegetables

Heat a drizzle of oil in a large pan over medium heat

Add shrimp, season with 1/4 TSP of salt and pepper. Cook for 4 minutes

Add bell pepper, scallions, ginger, and garlic. Cook for 2 minutes.

Stir in sauce. Cook for 1 minute.

Remove from heat. Stir in edamame and orange. Season with 1/4 TSP of salt and pepper

Step 4: Finish and Serve

Fluff Rice with fork

Divide rice between bowls

Top with shrimp mixture, and any remaining sauce from pan

Garnish with scallions

Serve hot and enjoy!
