Cheesy Tex-Mex Ramen Skillet

CHEESY TEX-MEX RAMEN SKILLET WITH TOMATO, GREEN PEPPERS, AND TOASTED PANKO


PREP TIME: 5 Minutes/ COOK TIME: 20 Minutes

DIFFICULTY LEVEL: EASY
INGREDIENTS:  Scallions, Tomato, Lime, 1 TBSP Southwest Spice Blend, 1 Cup Cheese Sauce, 2 TBSP Cream Cheese, 1 Cup Mexican Cheese, 2 TSP Hot Sauce, Long Green Pepper, Ramen Noodles, 1 Cup Cheddar Cheese, 1/4 Cup of Panko 

Step 1: Prep

Wash and dry produce.

Core, deseed, and dice green pepper. Thinly slice scallions. Dice tomato, Quarter lime.

Step 2: Toast Panko

Melt 2 TBSP of butter in a large pan over medium heat. Add panko, cook for 5 minutes or until golden.

Turn off heat, transfer to a bowl. Stir in half of the southwest spice, and 1/4 TSP of salt and pepper.

Step 3: Make Sauce

Heat a drizzle of olive oil in pan over medium heat. Add green long pepper, scallions, remaining southwest spice, and 1/4 TSP salt and pepper.

Cook for 3 minutes.

Stir in cheese sauce, and 1.5 cups of water. Bring to a simmer. Whisk until smooth for 2 minutes.

Whisk in cheddar and mexican cheese until smooth and melted.

Step 4: Finish and Serve

Break Ramen noodles in half, add to pan. Cook, stirring vigorously until Sauce has thickend, and noodles are cooked for 5 minutes.

Remove from heat, Stir in tomato, and 1/4 tsp of salt and pepper.

Top tex-mex skillet with toasted panko, scallions, squeeze of lime juice, hot sauce and lime wedge.
