Coconut Pork Patties
THAI CHILI COCONUT SMASHED PORK PATTIES WITH LIM RICE, ROASTED GREEN BEANS AND PEANUTS

INGREDIENTS: Ginger, Lime, Green Beans, Coconut Milk, Peanuts, 1/4 Cup Sweet Chili Sauce, Ground Pork, Jasmine Rice, 1/4 Cup Panko Bread Crumbs
Step 1: Prep
Preheat oven to 425.
Wash and dry produce.
Peel and mince ginger, zest and quarter lime, trim green beans.
Step 2: Cook Coconut Rice
In a small pot, combine 1/2 cup water, 1/4 cup coconut milk, 1 TBSP butter, 1/2 TSP sugar, and 1/4 TSP of salt.
Bring to a boil, stir in rice. REDUCE HEAT TO LOW, and cover. Cook rice for 15 minutes.
Keep covered off heat until ready to serve.
Step 3: Form Meatballs
While rice cooks, in a large bowl, combine ground pork, panko, ginger, and 1/4 TSP salt and pepper.
Form into meatballs.
Step 4: Roast Meatball Patties and Green
Roast meatballs and green beans for 16 minutes.
Step 5: Making Sauce
On low heat, in a large pan, combine chili sauce, remaining coconut milk, squeeze of lime juice, and 1/4 TSP salt and pepper.
Simmer for 5 minutes.
Step 6: Finish and Serve
Fluff rice with a fork, stir in lime zest, and season with 1/4 TSP of salt and pepper. Add meatball patties to pan with coconut chili sauce, toss to coat.
Divide rice between bowls, top with meatball patties, and green beans. Spoon over any remaining sauce.
Sprinkle with peanuts. Serve with lime wedge.
