Chicken Bacon Chowder
CREAMY CHICKEN AND BACON CHOWDER WITH CORN, POTATOES, SCALLIONS, AND LIME

INGREDIENTS: 2 TBSP Fry Seasoning, Chicken Cutlets, 1 TBSP Garlic Powder, Scallions, 2 TBSP Chicken Bouillon Paste, Bacon, Corn, 2 TBSP Cream Cheese, Potatoes, Lime
Step 1: Prep
Preheat oven to 425 degrees
Wash and dry produce
Dice potatoes
Thinly slice scallions
Drain and Rinse Corn
Zest and quarter Lime
Step 2: Cook Chicken and Bacon
Pat chicken dry with paper towels, and season all over with half of the fry seasoning, and 1/4 TSP of salt and pepper
Place Chicken on one side of a lightly oiled baking sheet
Arrange bacon in a single layer on an empty side of sheet
Roast for 20 minutes
Transfer chicken to a cutting board and bacon to a paper towel lined plate
Step 3: Cook Potatoes
While chicken and bacon roast, place potatoes in a large microwave safe bowl
Microwave for 5 minutes
Step 4: Start Chowder
Heat a large drizzle of oil in a large pan over medium heat
Add scallions
Cook for 1 minute
Add another drizzle of oil, corn, garlic powder, remaining fry seasoning, 1/2 TSP of sugar, and 1/4 TSP of salt and pepper
Cook for 4 minutes
Reduce heat to low
Whisk cream cheese, chicken bouillion paste, and 1 cup of water
Cook for 3 minutes
Step 5: Finish Chowder
Once bacon is cool enough to handle, roughly chop
Stir in lime zest, potatoes, and bacon into pot
Season with salt and pepper
Step 6: Finish and Serve
Thinly slice chicken
Divide Chowder between shallow bowls
Top with chicken, scallions, squeeze of lime juice
Serve hot and enjoy!
