Chicken with Creamy Mushroom Sauce

CHICKEN WITH CREAMY MUSHROOM SAUCE, GARLIC MASHED POTATOES, AND ARGULA SALAD


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Potatoes, Mushrooms, Lemon, Chicken Cutlets, 1 TBSP Flour, 3 TBSP Sour Cream, 1 TSP Garlic Powder, 1 TBSP Chicken Bouillon Paste, Argula, Parmesean Cheese


Step 1: Start Prep and Cook Potatoes

Wash and dry produce

If desired, peel potatoes

Add potatoes to a pot with salted water covering potatoes by two inches

Bring to a boil

Cook for 15 minutes

Reserve 1/2 cup of potato liquid, and drain remainder

Keep covered and off heat until ready to mash

Step 2: Finish Prep

While potatoes cook:

Slice mushrooms. Skip this step if mushrooms are already pre-sliced

Quarter lemon

Step 3: Cook Chicken

Pat chicken dry with paper towels

Season all over with 1/4 TSP of salt and pepper

Sprinkle flour all over chicken, pressing to adhere. Shake off any excess

Heat a large pan over medium heat with a drizzle of oil

Add chicken

Cook for 6 minutes per side

Transfer to cutting board

Step 4: Mash Potatoes

Return potatoes to pot on low heat

Add half the sour cream, half the garlic powder, 2 TBSP of butter, 1/4 TSP of salt and pepper, and reserved potato water

Mash until smooth

Keep covered until ready to serve on low heat

Step 5: Make Sauce

Heat pan used for chicken to medium heat

Add a drizzle of oil

Add mushrooms

Season with remaing garlic powder, and 1/4 TSP of salt and pepper

Cook for 4 minutes

Stir in chicken bouillion paste, and 1/4 cup of water

Bring to a boil

REDUCE HEAT TO LOW, add 2 TBSP of butter

Simmer for 3 minutes

Stir in sour cream, and 1/4 TSP of salt and pepper

Step 6: Make Salad

To a large bowl combine Argula, squeeze half of lemon juice, parmesean cheese, and 1/4 TSP of salt and pepper

Mix well

Step 7: Finish and Serve

Divide mashed potatoes, and salad between plates

Top mashed potatoes with chicken cutlets

Top with mushroom gravy over chicken

Sprinkle parmesean cheese

Serve with lemon wedge on the side

Serve hot and enjoy!
